Sanskriti's Goan Bolinhas

Prep Time: 20 minutes plus cool dough in the fridge, overnight

Cooking time: 15 minutes 

Serving: 12 

Ingredients:

  1. 250g (2 cups) semolina (rava)
  2. 250g (2 cups) sugar
  3. 50g (1/2 cup) water
  4. 100g (1 cup) fresh, finely grated coconut
  5. 5g (1 tsp) ghee
  6. 3 egg yolks
  7. 30g (3 tbsp) all-purpose flour (maida)
  8. 2g (1/4th tsp) baking powder
  9. 2g (1/4th tsp) SNAP!N Cardamom powder
  10. Pinch of salt
  11. 1 egg white

Steps:

  1. Melt the sugar with water on a medium-low flame till it forms a thick syrup.
  2. Add semolina and stir well.
  3. Add the ghee, salt, grated coconut.
  4. Cool and keep in the fridge overnight.
  5. Remove the batter from the fridge and bring to room temperature, add the egg yolks and mix.
  6. Sift all-purpose flour, baking powder, SNAP!N Cardamom powder and salt.
  7. In another bowl, beat the egg white till it foams up and add it to the batter. Mix and keep it in the fridge for 30 minutes.
  8. Preheat the oven at 180°C. Line the baking tray with parchment paper. Make small round balls out of the dough and flatten the top, make any design you like with a butter knife on top.
  9. Bake at 180°C for 15 minutes.
